It’s August 1st! Our gardens are thriving here in Minnesota… one of my favorite times to write about fresh food. It doesn’t get any fresher or tastier than directly from the garden. Our sweet corn is especially surprising me this year, many other years I’ve had to run out after a storm and try to stand the corn back up after a gusty wind from a thunder storm blew through. Or maybe it was just one of the famously windy days that we get here in The Red River Valley. We’ve been blessed this year so far. The corn is standing straight and about 6 feet tall.
Not only is the corn thriving, the tomatoes, beets, herbs and even watermelon are thriving. We may even get an artichoke or two from our artichoke plant. Yay summer!
Here is one of our family favorite recipes that can be a great side or a very nice light lunch or dinner.
Sweet Corn, Heirloom Tomato & Goat Cheese Salad
8 ears Sweet Corn, grilled and kernals cut off the cob.
3 or 4 sliced tomatoes (I prefer a variety of heirloom tomatoes, the flavor is unlike any other. If you do not have, grape or cherry tomatoes cut in half work perfectly)
1 sweet onion, diced
Mix all together lightly, careful to not “squish” the tomatoes. Set aside.
1/4 cup apple cider vinegar
1/2 cup basil
1 T Agave nectar
salt & pepper
Combine these ingredients in a blender and blend.
Pour over corn mixture and toss lightly.
Sprinkle with crumbled Goat Cheese and enjoy!
