Grilling Season Ahead! by Culinary Goddess, Sara Watson

We just finished our outdoor patio and set the grill up (finally) for the summer. The garden has been planted and we are anticipating a great growing season! This makes me want to prepare and cook all meals outdoors at this time of year.
With all of the Food Network shows and the new fun things to grill, chicken is still one of my all time favorites. While I often look for new recipes and fun ways to prepare chicken, one of our family favorite recipes has become an old standby. Easy to prep ahead, quick to grill and everyone likes it. This is a recipe my Grandmother used to use at the lake in the summer. Her trick was often making us “wait” what seemed like a long time to eat, so of course we thought everything she prepared was THE BEST EVER. I recently brought this recipe out again and decided even if you eat on time, it is still one of the BEST EVER.

Spicy Grilled Chicken:
3/4 cup finely chopped onion
1/2 cup freshly squeezed grapefruit juice
2 tbsp canola oil
2 tbsp soy sauce
1 tbsp honey
1 garlic clove, minced
1 1/2 tsp salt
1 1/2 tsp rubbed sage
1 1/2 tsp dried thyme
1 tsp ground allspice
1 tsp garlic powder
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp cayenne pepper
6 boneless skinless chicken breast halves

In a shallow dish, combine all ingredients except hte chicken and mix well. Reserve about a 1/2 cup for basting and refrigerate. Add the chicken to the remaining marinade and turn to coat. Cover and let sit overnight.
Remove the chicken before cooking. Discard the marinade. On a Med-High grill, grill the chicken for about 3 minutes per side. Baste the chicken with the reserved marinade. Continue grilling for 6 to 8 minutes basting and turning.
I like to serve with a fresh summer salad filled with cherry tomatoes, red onion, cucumber, feta cheese and a light lemon-olive oil dressing.
